Winemaking

The Busy Signal grapes are hand-picked and transported to the winery where they are destemmed and placed in tank. A small amount of sulfur is added at the destemmer, along with an enzyme which helps break down the grape allowing us to extract all their flavors. After a five-day cold soak, the grapes are inoculated with yeast. Upon the conclusion of fermentation, we add malolactic bacteria to help the wine go through malolactic fermentation. Once that process is finished, sulfur is added to protect the wine and it is transferred to neutral French oak barrels for aging. In the Spring, we blend the barrels for the wine. We filter the wine before bottling.
